About Us

Our Story

Trios Tacos began with a lifelong appreciation for Mexican food and culture.

When our family arrived in San Diego in 1975, we were introduced to a world of flavors that quickly became part of our lives. Fresh meats, seafood, handmade tortillas, salsa fresca, guacamole, beans, rice, and the unmistakable kick of a great hot sauce created meals that stayed with us long after the last bite.

Over the years, we explored taco shops, family-owned restaurants, neighborhood eateries, and regional specialties across California and beyond. Every visit offered something different, yet each one shared the same connection to tradition, community, and pride in Mexican cooking.

That appreciation eventually became the foundation for Trios Tacos.

Our menu celebrates the regional flavors that make Mexican cuisine so distinctive. Each taco draws inspiration from a different part of Mexico, allowing guests to experience the traditions, ingredients, and cooking styles that have shaped generations of recipes. From the coastal flavors of Baja California and Sinaloa to the rich culinary heritage of Central Mexico and the Yucatán Peninsula, every taco tells a story.

We created Trios Tacos to share the food we have enjoyed for decades and to introduce guests to the regional roots behind the flavors they love. Mexican cuisine carries centuries of history, craftsmanship, and cultural pride. We believe those traditions deserve to be celebrated and enjoyed by everyone.

We invite you to join us, explore the regions behind our tacos, and experience the flavors that inspired our journey.

Real Tacos. Real Roots.

Fresh tortillas. Fresh salsas. Fresh ingredients served the way they should be.

At Trios Tacos, every recipe starts with respect for where it came from. Our tacos follow the flavors, methods, and regional roots that make Mexican cooking so distinct. From Baja-style seafood to Central Mexican alambre and Yucatán-style pollo pibil, each taco brings guests closer to the places that inspired it.

Every taco is made to taste familiar to those who know the region and welcoming to those discovering it for the first time.
